Make An Irish Salad To Complement the Red, White, and Blue This 4th Of July!

This salad looks delicious and incorporates the colors of the Irish flag as well.  This weekend bring this salad to your picnic and you will be the hit of the party.

TOTAL TIME: Prep/Total Time: 20 min. MAKES: 4 servings
1 package (6 ounces) fresh baby spinach
2 medium pears, thinly sliced
2 medium oranges, peeled and sectioned
2 tablespoons crumbled feta cheese
2 tablespoons chopped pistachios
3 tablespoons canola oil
2 tablespoons orange juice
1 tablespoon lemon juice
1 teaspoon honey
1/2 teaspoon grated orange peel
1/4 teaspoon salt

Nutritional Facts
1 serving equals 212 calories, 13 g fat (1 g saturated fat), 2 mg cholesterol, 232 mg sodium, 23 g carbohydrate, 4 g fiber, 3 g protein. Diabetic Exchanges: 2 fat, 1 vegetable, 1 fruit.

Divide spinach among four plates; top with pears, oranges, cheese and pistachios.
Whisk the dressing ingredients; drizzle over salads. Serve immediately.
