National Fudge Day, But What Is Fudge Without Irish Cream?

Here are two recipes with Bailey’s Irish Cream in the ingredients.
Not all fudge is chocolate as hard as that is to believe.

“This is the creamiest fudge ever and is sure to put a smile in those Irish eyes. The alcohol does not burn out of this very much, so I wouldn’t recommend this for the wee leprechauns in the houselhold. Fantastic to give away for St. Patrick’s Day gifts,” said Heather Baker the author of the recipes. They have a quick prep time so you can enjoy sooner!

24 oz milk chocolate chips ( 2 – 12 oz.pkgs.)
12 oz semi sweet chocolate chips
14 oz marshmallow cream
2 tsp vanilla extract
2/3 c bailey’s irish cream
4-1/2 c granulated sugar
12 oz evaporated milk
1/2 lb butter or margarine

Directions Step-By-Step
1. In a very large bowl, combine the milk chocolate chips, semi-sweet chips, marshmallow cream, vanilla,and Bailey’s Irish Cream. Set aside.
2. Line a 10×15″ baking pan with foil. Lightly spray with cooking spray.
3. In am medium saucepan, combine granulated suagr, evaporated milk, and butter. Bring to a gentle boil over medium heat. Cook slowly and stir constantly for 10 minutes.
4. Pour the hot mixture into the bowl with the chips. Stir slowly by hand to combine. It is important to do this step by hand NOT with a mixer. Stir for approx. 2-3 minutes.
5. Pour fudge into greased pan and chill to set.

bailey light fudge

3/4 c margarine or butter
3 c sugar
1/2 – 3/4 c evaporated milk
1/3 c Bailey’s Irish cream
1 Tbsp instant coffee crystals
7 oz jar marshmallow cream
1 pkg vanilla morsels or butterscotch chips
1 tsp vanilla extract

Directions Step-By-Step
1. In a small bowl combine Bailey’s and coffee crystals. Microwave on high for 10 seconds. or until melted and dissolved
2. In a medium saucepan, over medium heat, melt butter,evaporated milk, sugar and marshmallow cream. Slowly add the Bailey’s coffee mixture; stir well. Boil for 5 mins.
3 .Remove from heat and stir in chips and vanilla extract. Stir for approx. 3-4 mins. until smooth. Pour into a foil lined 8×8″ pan. Chill to set.
